Place tomato slices on a baking sheet. In a small bowl, combine butter, Blue cheese, Parmesan, and parsley with a fork until well blended. Add enough crumbs to make a crumbly dough. Divide evenly among tomato slices and press to form a "crust" on each. Broil until topping is brown and tomatoes are heated through. Serves 6.
